TO EACH PRODUCT ITS CYCLE

MultiFresh blast chills or shock freezes over 90 different types of product. To respect the differences between food in terms of consistency, humidity and nutriments, MultiFresh creates an ideal cold curve for each item. Shock freezing a fillet of beef, fish fillets or vegetables requires completely different temperatures and ventilation. In addition, with MultiFresh you can customize each cycle to adapt it to your needs: for example, freshly made ice cream can be blast chilled at -12°C for display in the window, or mixes in moulds can be turned out at the ideal temperature before being blast chilled. With MultiFresh you decide the chilling and freezing temperatures. Only in this way will all your products be as fresh as when they were made.

Controlling the thawing process and managing the right temperature means slowing down bacterial proliferation and keeping the structure of the food intact. With its thawing cycles designed for different densities,  MultiFresh helps you to meet your customers’ requirements at any time. Use MultiFresh to choose the temperature and time at which your food will be thawed and ready for use.

MultiFresh cooks meat or fish at low temperature, with a core temperature of up to 70°/75°C, without dehydrating or weakening the fibres, maintaining the original colour and exalting the flavour.
The meat/fish can be browned before cooking, or immediately after, by placing on a strongly heated hotplate. The meat or fish will remain extremely tender and delicate, with fantastic flavour never experienced before. Compared to other low temperature cooking systems, MultiFresh is the only machine in the world that cooks and blast chills or cooks and shock freezes in a single appliance. MultiFresh works even when you’re not there; you can programme the time in the morning when you want to have your products ready for use, already cooked and blast chilled or shock frozen.

ALWAYS READY TO SERVE WITH MULTIFRESH!

You can use MultiFresh to regenerate your dishes by setting the required temperature and the time you want the product to be hot and ready to serve. MultiFresh regeneration cycles go automatically from holding (+ 3°C to -18°C) to regeneration at + 70°C at the core. 
   

PASTEURIZATION: INCREASE THE SHELF LIFE OF YOUR PRODUCTS!

Using the different cycles MultiFresh pasteurizes and blast chills (+3°C) or pasteurizes and shock freezes (-18°C), increasing the shelf life of your products. You can take advantage of MultiFresh to pasteurize ready-made ice cream mixes, crèmes, and lasagne before conserving them; their shelf life is increased by 30%.

   

MAXIMUM PRODUCTIVITY

When you start the Delicate +3°C chilling cycle or Strong -18°C freezing cycle and enable the continuous cycle MultiFresh works on manual for unlimited time until you use the stop prompt.
You can insert different types of products at different times and memorize the insertion times.MyA tells you when the food in question has been chilled or frozen. The display for the cycle involved will continue to show the food that will be ready first, the time countdown and the food’s position in the appliance.

For each function, there is a wide choice of cycles specifically designed and tested to maintain the organoleptic characteristics of each product group. Collect your Favourite cycles in a special area so that you can rapidly start and run your most frequently used production processes. MULTIRACK®: FLEXIBILITY BETWEEN STEPS

The exclusive adjustable tray rack by Irinox is used to alter the distance between trays every 20 mm, according to the thickness of the food, and to exploit the entire yield in kg of MultiFresh.
MultiRack® allows you to go easily from using Gn 1/1 trays to 60x40 cm trays and vice versa, ensuring the proper flow of air inside the chamber.

SANIGEN®: 24/7 SANIFICATION

The Irinox patented sanification system, sanitizes every part of the chamber, including the areas that are difficult to access for cleaning (e.g. the evaporator, etc.).
The system’s efficiency, tested by Udine University and certified by the Ministry of Health guarantees bacteria abatement of 99.5%. Sanification is performed by airborne ions and acts on the surface of products, increasing the duration of preservation. Sanigen® acts to eliminate unpleasant odours that can occur at the end of the work cycle or the working day.

WE’VE THOUGHT OF EVERYTHING

When we design our blast chilling and shock freezing systems we neglect no details so that you can concentrate on your work; we’ve thought of everything else.
For example, the Irinox SAFETY CLOSING SYSTEM, provided with new washable, durable gaskets, ensures perfect door closure when the blast chiller is operating. The Safety Closing System prevents potential infiltrations of humidity that could damage the product and cause needless energy waste.
The MultiFresh blast chiller transfers and saves all the data relating to each individual cycle on your computer (HACCP Control Software).
MultiFresh is easily cleaned; all its components are accessible and washable, including the evaporators, the removable condenser filter, the fans and the waterproof control panel.
